Fresh and vine-ripened foods

Sarah, my daughter-in-law asked me to pick some fresh basil for dinner tonight. She was sauteing fresh garden garlic and onions in chunks with cubed chicken breast in the savory oil I make with the herbs I grow. The house smells amazing! She chopped up the fresh basil and added it to the homemade alfredo sauce along with other spices and herbs, including a healthy dash of cayenne.

Then she made a fresh salad with baby spinach leaves, chunks of kale, chopped tomatoes and cucumber, onion and blueberries. With a homemade oil and vinegar dressing and we might as well call it a night, because nothing better than this dinner is happening for the rest of it!
When foods are allowed and encouraged to ripen on the vine/tree/shrub, wherever, it gives the fruit or vegetable time to create phytonutrients and phytochemicals. These are 2 words worth looking up. In the normal rhythm of life and grocery shopping, you will not buy produce with these quality ingredients. Produce has to be vine ripened to have them.
Why is this important? I know you want to research this yourself. In a nutshell, phytonutrients and phytochemicals are the superfoods for higher brain function. Grow your own food, because it is wonderful and delicious and because if you do, you control the quality of what your mouth, body and brain get. And your brain needs better than stores and even farmers markets can provide. Look it up!
